As part of its ongoing effort to showcase inspiring urban agriculture initiatives from around the world, AU/LAB’s [Rendez-vous AgriUrbains] program is collaborating with URBAgr’inn Days for this English-language webinar.
How can agriculture thrive in the very heart of a dense European capital? In this webinar, Trofý.Lab shares the story behind its ultra-urban farming initiative based in the center of Athens. Founded with the ambition to reconnect food production with city life, Trofý.Lab has continuously adapted its mission and target audiences, refining its value proposition while navigating the complexities of urban ecosystems.
Participants will discover how the organization evolved from an experimental idea into a structured urban agriculture model, working closely with private stakeholders and diverse decision-makers. The session will explore their business model, the strategic challenges of collaborating across sectors, and the lessons learned from operating in a dense metropolitan environment. Finally, Trofý.Lab will share its vision for the future—scaling impact, strengthening partnerships, and redefining how cities can grow food from within.

Petros Kartsimadakis – Founder & Project Lead, Trofý.Lab (Athens, Greece)
Petros Kartsimadakis is the founder and project lead of Trofý.Lab, a multidisciplinary initiative working at the intersection of urban agriculture, food systems innovation, and sustainable design. With a background in business intelligence and performance management, he shifted his focus toward food systems to explore how cities can reconnect with nature and local production.
Through Trofý.Lab, he develops urban farming projects, digital tools, and participatory initiatives aimed at transforming how food is produced, distributed, and experienced in cities. His work explores the “journey of food” from farm to fork, combining agroecology, technology, and community engagement to foster more resilient and inclusive urban food systems.
